The + button in the app header always creates a note. Use it if you want a note while a chat is open.

While writing

Type / on an empty line to open the insert menu. Search for the block you need, such as a heading or to-do list.

In Settings

Use Search settings to find a control by name. Press Escape once to clear the search; when the field is empty, Escape leaves the search field. Shortcut availability can differ between desktop versions and operating systems. Menu labels and tooltips in the installed app are the best guide to the shortcuts available there.
